Shaun has had years of experience in five star restaurants in downtown Toronto. Born & raised in Thornbury Shaun decided to venture back to Thornbury last summer and has been impressing people with his talents ever since.

At Bruce we are dedicated to serving the freshest, seasonal and where possible local food in a small plate format. Simplicity Bistro is a casual dining experience in the setting of an 1880's post masters office, it blends together both rustic charm and sleek elegance, to create an atmosphere that is intimate yet inviting. Focusing on recognizable Canadian foods and using french culinary techniques chef/owners Scott Chalmers and Andrew Barber have worked hard to create an affordable yet memorable dinning experience. The Dam Pub is a warm and cozy upscale family owned Scottish Whisky Pub in the heart of vacationland, just 2 hours north of Toronto, located in the village of Thornbury, Ont. The Dam Pub is operated by Whisky Specialist Stephanie Price. Over 600 whiskies from around the world, including over 400 single malts, with special attention shown to the true Scottish varieties. Executive Chef Suzette Gerrie continues to dazzle patrons with her her culinary skills including The Dam Pub's famous signature dish, Lamb Shank and the Islay Fling dessert for 2, a combination of fine chocolate & heaven with 2 nips of Lagavulin 16.
